Nei cibi, infatti, possono nascondersi agenti patogeni (batteri, virus, parassiti) o tossine di origine microbica, dannosi per la salute dei bambini soprattutto, provocando infezioni alimentari", sottolinea Susanna Esposito, docente di Pediatria all’università di Perugia e presidente dell’Associazione mondiale per le malattie infettive e i disordini immunologici (Waidid).
Queste le 10 regole 'targate' Waidid per salvaguardare la salute dei bambini e quella di tutta la famiglia:

1) Non esagerare con le uova di cioccolato: meglio scegliere un uovo di buona qualità e, nel caso in cui il bambino abbia ricevuto in regalo tante uova, utilizzare il cioccolato per preparare budini e torte nelle settimane successive alla Pasqua. Tenere presente che in alcuni soggetti, soprattutto se predisposti alle allergie, il cioccolato, se consumato in quantità eccessive, può dare reazioni allergiche.

2) Limitare il consumo di salame e insaccati vari che, insieme al miele artigianale e alle conserve di frutta e verdura fatte in casa, possono essere all’origine di intossicazioni importanti come il botulismo.

3) Fare attenzione alle uova crude e alle verdure non lavate: con questi alimenti uno dei rischi più frequenti è la salmonellosi, un’intossicazione caratterizzata da sintomi quali nausea, vomito, dolori addominali, diarrea e febbre.

4) Sì ai gelati artigianali, ma meglio consumarli in posti conosciuti: i derivati di uova crude come gelati e dolci alla crema, oltre alla maionese e salse varie, sono alimenti responsabili delle intossicazioni da Staphylococcus aureus.

5) Durante i pic-nic avere sempre cura dell’igiene delle mani prima di mangiare e ricordarsi di utilizzare solo acqua potabile magari portando acqua in bottiglia; fare attenzione ai cibi cotti molte ore prima e lasciati fuori per lungo tempo, preferendo appositi refrigeratori o contenitori termici.

6) Fare attenzione al pesce e ai molluschi crudi: il pesce crudo può essere portatore di un parassita, l’Anisakis, nocivo per l’essere umano perché può causare manifestazioni gastrointestinali (simili a volte a quelle dell’ulcera peptica e a quelle dell’appendicite) o reazioni allergiche.
